Last weekend, I bought some really good apple cider from the Twin Springs stand at the farmers’ market, so I’ve been drinking that. This evening, I made another batch of the eggplant, tomato, kale, and chickpea dish I made a few weeks ago, and this time included bean noodles for extra protein. Good things to eat!

One of my classmates in college - her family owned an apple orchard. During apple season, she’s go home for one or two weekends to help with cider making. Her favorite part was making pies, she told me. ☺️
