I’m planning on making an etouffee for dinner tonight; I have onion, bell pepper, and celery, and I also bought a jar of bay leaves. I used to cook with bay leaves, but I haven’t been using them for years. Since I don’t eat shrimp or crayfish, I’m planning to use tempeh for the protein food in the dish. Nawlins here I come.
