Friday evening, I made my first pot of borshch in months, and had that for dinner Friday and Saturday. One more dinner of that, and then I plan to make either minestrone or split pea curry. The borshch turned out pretty well, although the bunch of beets I bought contained only four smallish beets; there didn’t seem to be a stand at the farmer’s market where I could get one or two larger ones.
