Vegan Sacher Cupcakes

An online acquaintance, 17catherines, died rather recently. She left a recipe for Vegan Sacher Cupcakes online, so I tried baking the cupcakes in memory of her today. First there are the cupcakes themselves, then the cook carves out a cone from the top of each cupcake to spoon in apricot preserves, and then he makes a chocolate ganache to cover the cupcakes. All of this went reasonably well; my ganache-making might have gotten me fired from any patisserie that wished to preserve a reputation for elegance of presentation, but the cakes did end up mostly covered with bittersweet chocolate ganache on top of the cake and the apricot preserves.
